The Part of the Egg Everyone Throws Away Has the Real Brain-Health Evidence
The cholesterol debate has pushed a lot of people toward egg whites — away from the nutrient actually tied to memory.
Eggs have spent decades stuck in a cholesterol argument. That argument has mostly ignored a different nutrient — one concentrated almost entirely in the yolk, with a much more direct line to brain function.
Choline is the actual bottleneck for most people
Choline is a precursor to acetylcholine, the neurotransmitter most directly tied to memory formation. Most adults don't hit the recommended intake (550mg/day for men, 425mg for women) — and a single whole egg provides roughly 147mg, mostly concentrated in the yolk. Egg whites contain almost none of it.
What a 2025 study found
A large 2025 dose-response study in rural older adults found egg intake was associated with better cognitive function.1 A related analysis went further: mediation analysis showed that 39% of the total effect of egg intake on Alzheimer's-related cognitive outcomes was explained specifically by dietary choline intake — not other nutrients in the egg.2
The cholesterol nuance
Researchers from UCSD, examining the same question, noted that despite eggs' high dietary cholesterol content, their data showed no detrimental effect on cognition — and possibly a protective one. The emerging view among researchers is that saturated fat, added sugar, and sodium are bigger drivers of arterial plaque than dietary cholesterol itself, which shifts some of the old egg-avoidance logic.
